Gourmet meal with locally-sourced ingredientsJoin the fastest growing movement in food today- buying local food not only supports our local economy, it brings customers to you.  Minnesotan's are increasingly tuned in to where their food comes from- they know that local food makes sense for the environment, our local economy, and the palette.

 

But where to start? How do you find farmers? How do you plan dishes based on seasonal ingredients? What about rules or laws about buying directly from a farmer?

 

To answer these questions and more,  we have brought together some of the top chefs and knowledgeable experts in the state to share practical tips and resources to help all restaurants and chefs begin successfully using local food in their kitchens.


You will leave this day with the resources you need to start using local food:

  • List of farmers and distributors that sell local food to restaurants
  • Sample menus and dishes that feature local food
  • Sample spreadsheets for tracking local purchases
  • A guide to using local within your margins
  • Knowledge of regulations as they pertain to local food and restaurants

  • Local Foods on a Budget
  • Regulations and Laws
  • Bookeeping and Tracking Your Purchases:   Excel spreadsheets provided
  • Marketing and Advertising:   Promoting your use of local foods to your customers


 

 Featured Speakers:

  • Chefs from Lucia's Restaurant, the Birchwood Cafe, the Craftsman Restaurant, Corner Table, Sen Yai Sen Lek Thai, and more will discuss tips and their experiences
  • Inspections specialists from the Minnesota Department of Agriculture will address food regulations and laws
  • Greg Reynolds of Riverbend Farm  will discuss working with farmers
  • Distributors that sell local foods to restaurants (Co-Op Partners Warehouse, Hidden Streams Farm, and others) will present the option of purchasing food through local food aggregators
  • Representatives from Bon Appetit Management Company will address working with local foods on a budget
